Pizza pockets are always a favorite. Roll out some pizza dough and cut it into circles. Let your kids add their favorite toppings like pizza sauce, cheese, pepperoni and vegetables. Fold the dough over and seal the edges with a fork to make pockets. Bake at 400 F until the dough is golden brown.
Fruit smoothies are perfect for a hot summer day. Blend together yogurt or milk, honey and fresh or frozen fruit like bananas, berries and peaches. You can also add a bit of juice for extra sweetness. Pour into glasses and top with whipped cream and a cherry.
Quesadillas are delicious and fun to make. Place a flour tortilla in a skillet over medium heat. Add shredded cheese, cooked chicken, beans, corn and veggies. Top with another tortilla. Cook until the bottom is lightly browned, about 2 minutes, then flip. Cook the other side until the cheese is melted. Cut into wedges and serve with salsa, guacamole, sour cream or ketchup.
Pasta salad is always kid approved. Cook pasta shapes like bowties, shells or wagon wheels. Rinse with cold water and drain. Mix with mayonnaise or Italian dressing and add cubes of cheese, cooked chopped vegetables like cucumbers and carrots, olives, hard boiled eggs and cooked meat such as ham or tuna. Chill before serving.
Banana splits make a special treat. Slice bananas in half lengthwise and place in a dish. Top with two or three scoops of ice cream – chocolate, strawberry and vanilla are traditional. Drizzle with chocolate and strawberry syrup and whipped cream. Top with nuts and maraschino cherries.
